Quinoa Salad with Chive Dressing 


  • 1 cup of quinoa – cooked
  • 1 tomato
  • 1 red pepper
  • 1/2 small onion
  • Black olives, half a can
  • 1/2 cup Green Peas
  • Handful of chives
  • 2 lemons
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/2 tsp dry mustard
  • Sea salt & fresh pepper to taste

Cook quinoa according to package directions, making sure to rinse well in cold water prior to cooking to reduce bitterness. Set aside.

Roughly chop tomatoes, onions and red peppers.  Set aside.

Roughly chop chives and garlic cloves with knife.  Add to food processor and begin to chop more finely.  Squeeze juice of two lemons into food processor.  As blender is processing, add in oil and dry mustard. 

When dressing is fully blended it should appear as above, about a minute of swirling in the food processor.

We serve this dish as a build your own.  Each person gets a scoop of quinoa in the bottom of their bowl, adds their own toppings and dressing.  Season with desired amounts of sea salt & pepper.  Enjoy!!
