Black Bean Soup

Super easy and delicious, just how I like it!  Vegan Black Bean Soup is healthy, full of fiber, low in fat and nutritious.


  • 4 cups of dried black beans, soaked overnight
  • 2 tbsp olive oil
  • 1 onion
  • 1 small sweet potato
  • 3 cloves of garlic
  • 2 bay leaves
  • 1 tsp oregano
  • 1 tbsp cumin
  • 1 tbsp salt
  • 1 tsp smoked paprika
  • Juice of 1 lime, if desired
  • garnish with cilantro, green onions or jalapeños

1. Add oil to bottom of slow cooker, I used the 8 hour setting.  Chop onions & sweet potato, add to slow cooker.  

2. Peel garlic and mince or use garlic press.  Add to slow cooker.  

3. Add spices to slow cooker.  Add beans and cover with water.  I filled mine all the way up!

4. Cook 8 hours.  Remove approximately half of the soup and puree in blender.  Add back into soup and mix.  The bean puree thickens the broth.  We ate it right away.    

By the next day the leftovers had thickened into this wonderful rich soup!  Enjoy!
